To have the most granularity in the data as posible you have to change in the Database Settings the detailed statistics retention to the maximum scope you wish to cover, because data is summarized regularly to keep the size of the DB in a decent size, the default setting is 24HS

You need to go to: Settings -> Polling Settings -> Detailed Statistics Retention.
Keep in mind that this granularity also depends from the polling time you have configured, if you have polling cycles of 5 minutes, you cant have detailed statistics of 1 minute, and changing the detailed statistics for a long time will increase HUGELY the DB size and possibly the performance.
